Nacole
Feminine · “victory of the people”
Nicolas Appert worked out how to preserve food in sealed glass jars, won a prize from the French government for it, published the method rather than patenting it, and died poor. Every tin, jar and pouch of preserved food since works on his principle, which he arrived at fifty years before anybody understood why it worked.

The story of Nacole
The French government offered a prize for a way of feeding an army on campaign. Appert, a confectioner, spent fourteen years experimenting and arrived at the answer: put the food in a glass jar, seal it, and heat it in boiling water. He had no idea about microorganisms — Pasteur was half a century away — and simply established by trial that it worked. He took the prize on condition that he publish, which he did, and the English promptly improved on it by using tin. He spent his last years in poverty and was buried in a common grave.
Meaning
victory of the people
The Greek compound behind Nicholas is transparent and rather grand, and French produced the feminine Nicole from it. This spelling writes the unstressed first vowel as an a — which is what the syllable actually sounds like, since English reduces every unstressed vowel to the same colorless thing. The alteration is inaudible and it is the only place in the name where a choice exists.

- French produces the feminine Nicole
