Where it comes from

The story of Suzzette

Crêpes Suzette, thin pancakes flamed in orange liqueur, are claimed by Henri Charpentier, who said that in 1895, as a fourteen-year-old assistant waiter in Monte Carlo, he set the sauce alight by accident while serving the Prince of Wales and named the dish for a girl at the table; food historians doubt the story, and other claims exist. The parent name has its own famous portrait: Leonard Cohen's 'Suzanne' was written about Suzanne Verdal, a dancer in Montreal who served him tea and oranges in her apartment by the river. Suzzette, with its doubled z, is one of the American spellings of the French pet form.
