To tan a hide is to treat it with tannin, and for most of European history tannin came from oak bark. Whole woodlands were managed for it: oaks were coppiced or stripped, the bark was ground, and the hides sat in pits of the liquor for a year or more. The word tan comes through French from a Celtic term for oak, and tannin was named from the process rather than the other way round. Tanneries stank so badly that towns pushed them to the downwind edge, which is why so many English towns have a Tanner Street on the outskirts and a river that was ruined for centuries. The word is in wine, tea and photography now, and it started in a pit full of bark.
