Jasmine is one of the most expensive materials in perfumery for reasons that come straight from the plant's habits. The flowers give off scent at night, must be picked by hand within a few hours of opening, and yield so little oil that it takes several thousand blossoms to produce a few grams; a single field's harvest is measured in the weight of petals. The night picking is not tradition or romance, it is chemistry. Separately, the flower is the national one of Tunisia, and when the protests of the early twenty-tens brought down that country's government the international press named the events after it, so that a word for a scented climber ended up naming a revolution.
